6-8 is true for what you said. Those teams have players who are mostly in their prime.
For 9-11, these teams have starting XI's with some players above 30 and some players below 26. A good example is Barcelona. Valdes, Puyol, Xavi, and Alves are above 30. Iniesta, Messi, and Pique are roughly in their prime. Alexis, Pedro, Sergio, and Alba are still relatively young. Therefore, the mixed squad leads to an average age of 28.

Yeah, Giggs wasn't included because he is not considered to be a regular starting XI players for United. This is who I used,
