I have obviously tried Google. Need a specific and reliable source or two.
When it comes to football, its very difficult to count the viewers number. In each country there is a channel who has the exclusivity rights a league/games. They can determine the number of viewers in that country. You would have to add up all the viewers from each country to obtain the total. Same thing goes for NBA. As for NFL, its easier because they can find out the number from the providers, DISH, Verizon etc (because its only watched in US). I am not sure if they give out these information anywhere though.
Only big events audiences are counted, i dont think you will find a reliable site with all the numbers of every game.
It is possible to count figureheads for big events, such as the World Cup as a whole, or the EURO's. It is also possible to count the figureheads for an individual match, but the match has to be on a day when no other significant matches go on. For example, it is possible to count the figures for Bayern 2-1 Dortmund last season, but not for Madrid 1-1 Barca, because the El Clasico match went on in the Copa del Rey, which is not significant enough (and there's too many games going on that day). What's more is that the CL final was most likely displayed on a number of sports channels, not just football specific ones. So it's easier to count figureheads for big matches, but no one bothers to do it for individual and ordinary matches like City 2-1 L'pool.

It's not an accurate data. It's merely an assumption based on how many people order a specific channel, and how many are likely to be watching. It's merely what you would call an "educated guess", but nothing specific. You can only rely completely on stadium audience, but TV audience is not 100% traceable.
As to answer your question... I believe there is no way to get that data except for big matches like I mentioned. I usually hear the commentators state the amount of viewers before the big matches, so that's where I get them from.
It's impossible to gather how many views there are for most games when also looking for TV views. Usually, only the big matches or tournaments show how many tuned on their TV to watch. With enough effort, time, and patience you can probably find info on a lot of matches' amount of audience from home along with the attendance.

To sum it all up, the answer is yes and no. It depends on how important the match is, who are the teams playing, what is the league, whether it is a final, and if it broke a audience/attendance record to be worth being on the news the next day. For example, I was able to find the amount of viewers the EPL got last season but the best I could find about La Liga viewers was from the 2011/2012 season. Smaller leagues coverage-wise like Serie A, Bundesliga, Ligue 1 or La Liga will probably be tougher to snoop for about their coverage results.

Well, basically summing up your points, the only league that has its TV viewers tracked is the EPL, and that's for the league as a whole. Not for individual matches. And for individual matches, only the Champions League semis/final and international tournaments are noted.
You're right when you say it's the EPL that has the most info about the TV viewers they have per season or for a specific game, but there are some matches out of the EPL that also show how many TV viewers were there. There is also some information about other league's TV viewers.

The Premier League is the one with most information like you said, and it will probably stay like that for a while since this sort of info isn't as important as others (like revenue, attendance, money each team gained etc.) along with the big international tournaments. Despie that, there are times when the other leagues share some insight on how many viewers they got in a week/game. It's rare though.

Is there a way to check the amount of viewers a single game or whole tournament/league gets? For example, I'd like to know the amount of viewers the EPL or La Liga gets in total worldwide, or the amount of viewers that Liverpool VS City got.
Also, is it possible for other sports to? Such as the NBA or NFL, etc?
